The Carbon Heater® HotPAD heating systems combine the flexibility of passive heating plates with the advantages of active thermophores. The HotPAD system is not permanently connected to the Thermobox and can be moved from one box to the other as required. The main advantage of this is that the existing transport boxes can be used in different ways and if the box wears out, the heating is not affected. Due to the electronic temperature control, the food is only heated or regenerated when the temperature in the thermobox falls below 70 ° C. Keeping food warm according to HACCP
The HACCP regulations for keeping food warm provide clear rules for the menu service, meals on wheels service, carers, and caterers. The background to the DIN 10508 regulation are possible pathogens (e.g., Bacillus cereus) that can form resistant spores - up to 100,000 germs or spores can develop from one bacterium in a very short time. In food in particular, these spores can become a health problem when they germinate and usually lead to food poisoning with the result of diarrhoea and vomiting.
Against this background, cooked food must be kept warm in a temperature range of 65 ° C to 75 ° C and consumed no longer than two hours after preparation.
This regulation means that the meals delivered are not only checked and documented for compliance with the core temperature in the day care and school catering, and acceptance is refused if the lunchtime catering provided, for example, is not observed. The heat chain is only guaranteed for a short time, especially when transporting the cooked food in unheated transport or thermal boxes. Active heating of the meals is therefore necessary.
